Vegetable Omelette Recipe

Ingredients:

2 eggs
1 tsp black pepper
1½ capsicum, chopped
1–2 green onions, chopped
2–3 green chillies, chopped
Coriander leaves, chopped
Salt to taste
Oil for frying

Method:

Beat eggs, add vegetables, salt and pepper and mix well. Heat oil in a frying-pan, add the egg mixture and cook slowly. Lift with spatula and turn over to cook the other side. Fold and serve hot.
